59 ml olive oil

1 dash cayenne pepper

Directions

Combine all seasonings. Cut vegetables into large chunks. Put chicken breasts in casserole dish. Surround with vegetable chunks.

Brush olive oil generously on all poultry and vegetables. Sprinkle spices on chicken only.

Bake covered in a 350℉ (180℃) oven approximately 1 hour. Uncover and continue to bake until vegetables are crispy and the potatoes/chicken are browned.

For a spicy variation:

Dash some worcestershire sauce and/or hot sauce over the dish before baking.

I made this tonight adding a little more cayenne pepper and added diced sweet potato. My family absolutely loved it which is saying a lot! It was so easy to make. We will definitely add this to our dinner rotation.

Nice flavours, but even with the juices at the bottom, my chicken was rather dry. Perhaps I would add a little stock or white wine next time
