A scrumptious hash brown breakfast casserole with sausage (or bacon) that’s perfectly sized for two servings.

1/3 to 1/2 of a can, we use leftover homemade soup

1/3 to 1/2 of a can, we use leftover homemade soup

to taste

Directions

Cook the hash browns along with the onion until hash browns are crispy and onions are translucent.

Add the sausage (or bacon if desired) and cook until just beginning to brown; drain off excess fat (if any).

Remove from the heat, add the soup, cheese, beaten eggs and black pepper to taste. (No need to add any salt since the soup, bacon or sausage will deliver ample seasoning).

Transfer the mixture to a suitably sized oval baking dish . Top with a sprinkling of cheese if desired.

Bake for 30 minutes in a 350℉ (180℃) F oven.

Allow to rest for about 5 minutes before serving.

Ideas

Breakfast casserole vegetables: add your favorite vegetables, such as diced green pepper, pickled hot pepper rings, mushrooms, etc. Or simply garnish the finished casserole with fresh snipped parsley to dress it up.

Can this be made the night before and put in the refrigerator over night?

I haven't tried it, but I would say why not. It should be ok. If you do make it, please let us know how it turns out next day. Happy Cooking :-)
