Directions

In a large skillet, bring all other ingredients, except peas, pimentos, and capers, to a boil.

Cover and simmer for approximately 30 minutes until rice has absorbed liquid.

Add peas, remove from heat and let steam for a few minutes.

Arrange the chicken and sauce over rice, garnish with pimentos and capers.

This Arroz con Pollo recipe is a comforting, one-pot meal from Latin America. The chicken strips are seared and then cooked with rice, spices, chicken broth, tomatoes, and capers until it’s fragrant and delicious, perfect for leftovers.

Tip: If you don’t have capers, substitute with olives.
