Apricot Lamb Chops

 

Seasoned lamb chops are seared in hot skillet, then coated and served with a delicious apricot mixture.

Ingredients

118 ml apricot preserves (jam)

10 ml dijon mustard
5 ml garlic
minced
5 ml soy sauce, sodium reduced
2.5 ml worcestershire sauce
1.3 ml salt
0.6 ml cinnamon

0.6 ml black pepper
*
8 each lamb loin
chops, trimmed
*
1 x nonstick cooking spray
*

Directions

Combine first 5 ingredients in a small bowl; set aside.

Combine salt, cinnamon, and pepper, and sprinkle over both sides of lamb.

Heat a large nonstick skillet over medium-high heat.

Coat pan with cooking spray.

Add lamb to pan; cook 5 minutes on each side or until desired degree of doneness.

Remove skillet from heat; add apricot mixture, turning lamb to coat.

Place 2 chops on each of 4 dinner plates; spoon remaining apricot mixture evenly over chops.
