This veggie salad is a very common dish on Chinese dining table. It's easy, tasty, refreshing and light. You can find lotus root, enoki mushrooms, black fungus and tofu sheet in all Chinese or Asian grocery stores and supermarkets. I used home-sprouted mang bean sprouts. Blanching bean sprouts and tofu sheet is a great way to kill off the bacteria that can cause food poisoning; blanching carrots, lotus root and black fungus can get rid of some bitterness, and also cook them into the right consistency that's great for a salad. You can also use celeries, or whatever similar textured veggies you have on hand to make this versatile and yummy salad.
