Yam Vietnam is one of those Vietnamese salads that proves you don’t need heat from a stove to build serious flavor.

Cooked pork and shrimp get tossed in a punchy dressing of lime juice, vinegar, garlic, ground coriander, and dried chili. Sliced cucumber adds cool crunch, and a scattering of fresh mint ties the whole thing together with that unmistakable Southeast Asian brightness.

It comes together in 20 minutes flat and eats like a light, refreshing meal on a hot day.

Kitchen Tips

  • Use leftover roast pork or poached pork loin here. The dressing does all the heavy lifting on flavor, so the meat just needs to be tender.
  • Let the salad sit for 5 minutes after tossing so the dressing can soak into the pork and shrimp.
  • Serve over a bed of butter lettuce or with rice vermicelli noodles on the side for a more substantial meal.

Directions

Combine in a bowl the corriander, garlic, pepper, vinegar, lime juice, salt, sugar and chili peppers.

Add the pork, shrimp and cucumber.

Toss lightly.

Sprinkle with the mint.
