Flapper Pie is a beloved Prairie Canadian dessert that predates store-bought cookies in most kitchens. The graham cracker base goes back to the days when home cooks crushed crackers by hand into fine sandy crumbs.

What sets this version apart is the cornstarch-thickened custard. Stirring a little of the hot milk into the beaten egg yolks before returning everything to the pan keeps the yolks from scrambling, giving you a smooth, glossy filling instead of a curdled mess.

The meringue gets its lift from beating egg whites with cream of tartar until soft peaks form, then adding sugar gradually for that stiff, glossy finish. Reserved graham crumbs sprinkled on top toast up alongside the meringue for a sweet textural snap.

This pie needs a full cooling period on the counter so the custard sets properly. Cutting too soon means runny slices and tears.

Pro Tips

  • Seal the meringue right to the edge of the crust to prevent shrinking and weeping.
  • For the custard, keep the heat low once you add the yolks back in. Boiling at this stage scrambles the eggs.

Directions

Combine crumbs, sugar and cinnamon; blend in butter.

Set ¼ cup aside.

Press remainder onto bottom and sides of 9 inch pie plate.

Bake in 375 degree F oven for 8 minutes; cool.

FILLING: In saucepan, mix sugar with cornstarch; blend in milk.

Cook over medium heat, stirring, until boiling; stir a little into yolks, then retUrn to the saucepan.

Cook over low heat, stirring, for 2 minutes or until thickened.

Remove from heat; add vanilla and cool slightly.

Pour into pie crust.

MERINGUE: Beat egg whites with cream of tartar until soft peaks form; gradually beat in sugar until stiff peaks form.

Spread over filling, sealing to crust.

Top with reserved crumbs.

Bake in 400 degree F oven for 5 minutes or until lightly browned.

Cool to room temperature, about 4 hours.
