Mandarin Salad

Metric measurements


For salad:
1/2cup almonds sliced
3tablespoons sugarVideo
1/2head iceberg lettuce *
1/2head romaine lettuce
1cup celery chopped
3each scallions, spring or green onions chopped
For dressing:
1/2cup vegetable oil
4tablespoons sugarVideo
1tablespoon salt and black pepper *
4tablespoons cider vinegar
1tablespoon parsley leaves
11ounces mandarin oranges 1 can

Over medium heat cook sliced almonds and sugar, stirring constantly until almonds are glazed and sugar dissolved. Cool.

Combine torn iceberg and romaine lettuce, chopped celery and green onions.

Prepare Dressing:

Mix together all dressing ingredients in small bow.

Toss oranges, lettuce, almonds and dressing immediately before serving.
