Microwaving a whole turkey sounds wild until you taste one that came out juicy and browned from the basting paint. This method uses a floured oven bag inside a glass roasting dish to trap steam and color the skin while the meat cooks evenly in a fraction of the oven time. A 12-pound bird finishes in about two hours at 70% power, a real win when the oven is busy with sides or when you are cooking in a small kitchen.

The quarter-rotation is the key. You start breast-down to baste the white meat in its own juices, rotate once, flip the bird breast-up, rotate once more, and the result is a turkey that cooks without dry patches.

A long rest afterward (nearly an hour) gives the juices time to settle back into the meat instead of running onto the board. Plan to check with a probe, 165°F (74°C) in the thigh is the safe target.

Pro Tips

  • Flour the inside of the roasting bag before the bird goes in. The flour keeps the bag from bursting and helps the juices thicken into ready-made gravy.
  • Use a microwave-safe glass dish large enough to catch the ample juices that will pool. A shallow dish overflowing ruins the cook.
  • Turning a wet, hot turkey upside down is slippery business. Use sturdy tongs and oven mitts, and drain the hot liquid from the bag before the flip.
  • Verify doneness with a meat thermometer: 165°F (74°C) in the thickest part of the thigh, not touching bone.
  • Let the bird rest the full 57 to 60 minutes in the bag. Carving too early loses every drop of juice.

Variations

  • Rub the bird with a compound butter of softened butter, sage, thyme, and garlic before painting with basting agent for deeper flavor.
  • Skip the cavity stuffing and cook your stuffing separately for food-safety peace of mind and more even cooking.
  • Swap the basting agent for a paprika-honey glaze for color and extra sweetness.

Directions

First stuff the turkey with your favorite stuffing mix.

Then paint the turkey with the prepared turkey basting agent.

Gently place the stuffed and painted bird in the flour dusted roasting bag and place into a glass microwave roasting pan.

Enter the weight of the turkey on your microwave computer.

For example, a 12 lb, 8 oz bird will cook in the microwave oven 115 to 121 minutes at 70% power.

Standing time will be 57 to 60 minutes.

Dividing the time into fourths, the bird will cook at 70% power for about 29 minutes on its breast side; turn the dish and cook another 29 minutes.

Now carefully turn the bird upside down (there will be a lot of juices in the bag, so be extra careful).

With the bird breast side up, cook another 29 minutes at 70% power.
