30 minThis is the recipe you reach for on a Tuesday night when you want something healthy but can’t be bothered with a production.
Two fish fillets, a light rub of oil, and a sprinkle of seasoned breadcrumbs with Parmesan, garlic powder, and lemon pepper. Into the oven, out in 20 minutes, flaky and golden on top.
Six ingredients. One pan. Almost no cleanup.
Serve it with a squeeze of lemon and a green salad and you’ve got a complete low-calorie dinner that took less effort than ordering takeout.
Kitchen Tips
- Any white fish fillet works here: cod, tilapia, sole, halibut. Go with whatever looks freshest at the counter.
- Pat the fillets dry before oiling so the breadcrumb topping sticks instead of sliding off.
- Fresh breadcrumbs give a lighter crust than dried. Pulse a slice of bread in the food processor if you don’t have any on hand.
