Bring a large pot of water to the boil and boil shrimp for 3-5 minutes until they are pink and rise to the top. Drain in colander until cool (20 - 30 minutes). This will finish any cooking but ensure that they remain tender not rubbery.
Now you can peel them and remove the vein by slicing down the outside of the back and running them under cold water, or if you don't care about the vein, just peel them. Place in the refrigerator for several hours (or overnight wrapped in plastic). The vein/intestine doesn't hurt anyone, but some people have a phobia about it.
Place cocktail sauce in a bowl in middle of a platter. Arrange shrimp around bowl of sauce.
Makes: 4 servings.
For the COCKTAIL SAUCE, try your favorite ketchup variety with added horseradish to taste. (usually a few teaspoons per cup of ketchup gives a sufficient kick)
