| 4 | each | pork chops | |
| 1 | teaspoon | vegetable oil | |
| Sauce | |||
| 1 | clove | garlic | minced |
| 2 | teaspoons | vegetable oil | |
| 4 | tablespoons | sherry | dry or broth |
| 4 | tablespoons | soy sauce | |
| 1/4 | teaspoon | red pepper flakes | crushed |
| Final touch | |||
| 2 | teaspoons | cornstarch | |
| 2 | tablespoons | water | |
1. Mix sauce ingredients together and set aside.
2. Trim pork chops of fat and sauté in hot oil until brown on both sides.
3. Pour sauce over chops. Cover tightly and simmer over low heat until chops are tender Add a little water, (1 to 2 Tb) if needed to keep sauce from cooking down too much.
Turn once.
4. Remove chops to platter.
Stir in cornstarch dissolved in water. Cook until thickened.
5. Pour over chops and serve.
Tips: Boneless pork loin chops can be used. Trim fat and pound to 1/4-inch thickness.
This recipe is fantastic for something different to do with pork chops. We have been making a slight variation of this recipe for years. It's great to see this online! Best when served over white rice and w/french style cut string beans.

I served this as a side dish with a coconut chicken curry and Thai spring rolls. It was an amazingly good salad. Everyone asked me for the recipe. I highly recommend it. (I did, however, substitute fresh cilantro for the watercress and I really think that made it.)
