| 1 | each | enchilada sauce | large can |
| 1 | each | flour tortillas | package, corn or flour, small |
| 1 | each | chicken | breast, cut in small pieces |
| 1 | x | monterey jack cheese | grated |
| 1 | x | cheddar cheese | grated |
Spray a 9x13 inch baking dish with no-stick spray. Place small amount of sauce in pan. Heat corn tortillas in microwave to soften. Fill tortillas with chicken, cheese or both. Fold over and place in pan, seam side down. Cover with remaining sauce and sprinkle with cheese(s). Bake for 45 minutes at 350 degrees.
It was really quick and easy to prepare. Makes a great meal when unexpected company stops over.
