Ingredients

1/4cup mayonnaise
1tablespoon sweet red bell pepper red pepper, roasted, drained, chopped or pimiento, optional
1tablespoon onion finely chopped
1 1/2teaspoon cider vinegar
1teaspoon prepared mustard dijon-style
1/4teaspoon salt
1x black pepper to taste
1each potatoes idaho, baked, cubed

Directions

In small bowl combine first seven ingredients; mix well. Add potatoes; toss to coat well. Cover; refrigerate.

Makes 1 serving.
