| 1/4 | cup | mayonnaise | |
| 1 | tablespoon | sweet red bell pepper | red pepper, roasted, drained, chopped or pimiento, optional |
| 1 | tablespoon | onion | finely chopped |
| 1 1/2 | teaspoon | cider vinegar | |
| 1 | teaspoon | prepared mustard | dijon-style |
| 1/4 | teaspoon | salt | |
| 1 | x | black pepper | to taste |
| 1 | each | potatoes | idaho, baked, cubed |
In small bowl combine first seven ingredients; mix well. Add potatoes; toss to coat well. Cover; refrigerate.
