Pitkin County Pork Chops

Pretty darn easy and tasty. I had all ingredients on hand and didn't have to worry about a trip to the store. I didn't use any cayenne because we have small children, but it still came out great. The sauce was tasty over rice!

Ingredients

2 tablespoons butter
1/2 cup onion chopped
3 Cloves garlic minced
1 teaspoon salt
1/4 cup prepared mustard
1/4 teaspoon cayenne pepper
2 tablespoons cider vinegar
2 tablespoons brown sugar
2 tablespoons worcestershire sauce
6 each pork chops 1 to 1 1/2 inches thick
3/4 cup ketchup
1/2 cup chili sauce
1/3 cup water

Directions

In a small bowl, combine butter, onion, garlic, salt, mustard, cayenne pepper, vinegar, brown sugar and Worcestershire to make a paste.

Spread over pork chops.

Place in large baking dish and broil close to heat for 5 minutes.

Remove from oven. In small bowl, combine ketchup, chili sauce and water; blend well.

Pour sauce over chops. Cover and bake at 350 degrees for 1 hour or until pork is tender.

These pork chops come out so moist and tasty. The recipe is easy to prepare and uses ingredients that most people already have on hand. They are quite spicy, I suggest using less cayenne and depending on the type of chili sauce you use, cut the 1/2 cup down to a 1/4 cup (I use a very spicy asian chili sauce). These chops were enjoyed by the whole family including a picky child. This recipe will definitely be put into my regular recipe repitorie!

Sausage in Cream Sauce

Wonderful flavors. I substituted 1/2 cup of white wine for 1/2 cup of the cream. Adjusting flavor with salt and pepper before serving is critical. My house still smells great from preparing this aromatic dish!
