Got leftover turkey? Five minutes and a bowl is all this takes. Cooked rice, diced turkey, sliced celery, diced pimientos, and a Dijon mustard dressing get tossed together and spooned over lettuce leaves.

The pimientos add a sweet, slightly smoky pop of color that makes this look more considered than a simple throw-together, and the Dijon dressing is sharp enough to cut through the starchiness of the rice. Serve it cold or at room temperature. Either works.
