| 1 | cup | oats, quick cooking | quick-cooking oats, uncooked |
| 3/4 | cups | flour, all-purpose | |
| 1/2 | cup | brown sugar | packed |
| 1/2 | teaspoon | salt | |
| 1/2 | teaspoon | vanilla extract | |
| 1/2 | cup | vegetable shortening | |
| 1/4 | cup | sugar | |
| 1 | each | egg | |
| 1/2 | teaspoon | baking soda | |
| 1/2 | cup | walnuts | chopped |
| 1 | cup | mini chocolate chips |
Preheat oven to 375. In a large bowl, with mixer at medium speed, beat all ingredients except walnuts and chips until well mixed, occasionally scraping bowl. Stir in walnuts and chocolate chips.
Drop by teaspoonfuls, 1 inch apart, onto greased cookie sheets. Bake at 375 for 12 minutes or until lightly browned. Immediately remove cookies to wire racks and let cool.
Yield: 3 dozen.
These are the yummiest cookies. They were very easy to make and turned out great. I took them to a small gathering and they disappeared very quickly.

Made them for my wife, always she does housework at home, so this time tried to do some cookies for her, hmmm, when I took all the cookies in front of her, she really felt happy, big hug for me, she said it is the most delicious cookies that she have ever tasted, thanks for this recipe!
