Ingredients

1 small head lettuce diced
1 each cucumber peeled, sliced
1 small green papaya seeded and julienned
2 each tomatoes cut into wedges
4 tablespoons scallions, spring or green onions chopped
4 tablespoons cilantro chopped
4 tablespoons peanuts roasted and crushed
2 each red chili peppers julienned
1/4 cup lime juice
1/8 cup soy sauce
2 teaspoons sugar

Directions

In a large salad bowl, arrange in layers the lettuce, cucumber, papaya, tomatoes, onion and cilantro.

In a small bow, mix together the peanuts, chilies, lime juice and soy sauce.

Pour over the salad, toss and serve.
