| 6 | tablespoons | margarine | |
| 1/4 | cup | sugar | |
| 1 | cup | flour, all-purpose | |
| 2 | large | eggs | |
| 3/4 | cup | sugar | |
| 2 | tablespoons | flour, all-purpose | |
| 1/4 | teaspoon | lemon zest | grated |
| 3 | tablespoons | lemon juice | |
| 1/4 | teaspoon | baking powder |
Beat butter for 30 seconds.
Add the 1/4 cup sugar and beat until fluffy.
Stir in the 1 cup flour.
Press onto bottom of greased 8-inch square pan.
Bake 15 minutes.
Meanwhile, beat eggs; add remaining 3/4 cup sugar, 2 tablespoons flour, lemon peel, lemon juice, and baking powder.
Beat 3 minutes or until slightly thickened.
Pour over baked layer and bake 25-30 minutes or until light golden around edges.
Cool. Sift powdered sugar over top.
Very, very delious. One complaint is that there is not temp on what to cook it at. I just had to guess by watching it cook.

They were excellent. I cooked the crust at 400 for 15min and then every thing at 350 for 25 minutes. It turned out perfect.
