Fresh lemon balm transforms ordinary lemonade into something bright, aromatic, and just a little bit fancy.

The herb steeps in the lemon-sugar mixture for at least two hours, infusing subtle minty-citrus notes that complement the tart lemon juice without overpowering it.

Serve it over ice with a whole lemon balm leaf floating in each glass for a simple presentation that looks like you put in way more effort than you did.

Kitchen Tips

  • Bruise the lemon balm first: Gently crush the leaves before steeping to release more essential oils and intensify the flavor.
  • Steep overnight for stronger flavor: Two hours is the minimum, but overnight in the fridge creates a more pronounced herbal character.
  • Adjust sweetness to taste: Start with the recipe amount, then add more sugar or water depending on how tart you like your lemonade.
