Jackson's Vanilla Wafer Banana Pudding

Why bother making Jello when you can try this rich pudding made of bananas and vanilla wafers.

Ingredients

8 ounces vanilla wafers one box
4 tablespoons flour, all-purpose
1/2 cup sugar
1/4 teaspoon salt
1 pound bananas (3 to 4 large)
2 cups milk scalded
2 large eggs seperated
1/2 teaspoon vanilla extract
1/4 cup sugar for meringue

Directions

Mix flour, 1/2 cup sugar and salt in top of double boiler; slowly stir hot milk and cook until mixture thickens, stirring constantly. Stir a little bit of hot mixture into beaten egg yolks, pour back into double boiler, cook about 2 minutes. Remove from heat, add vanilla and cool until just warm. Alternate layers of vanilla wafers, sliced bananas an pudding in a baking dish. Beat 2 egg whites until stiff. Pile lightly pudding. Bake in hot (400F) oven about 8 minutes or until golden brown.
