| 2 | cups | long grain rice | brown |
| 4 | cups | water | |
| 1 | teaspoon | sea salt | |
| 2 | each | onions | chopped |
| 1 | teaspoon | sea salt | |
| 4 | tablespoons | safflower oil | |
| 1 | each | zucchini | sliced |
| 1 | cup | eggplant | cubed |
| 3 | each | apples | cored, sliced |
| 2 | each | peaches | peeled, sliced |
| 1/2 | cup | raisins, seedless | |
| 1/2 | cup | apple juice | |
| 2 | tablespoons | curry powder | |
| 2 | tablespoons | red wine vinegar | |
| 2 | tablespoons | lemon juice | |
| 1 | teaspoon | lemon zest | |
| 1/4 | cup | peanuts | chopped |
| 2 | each | bananas | diagonally |
Combine rice, water and 1 teaspoon salt and steam 1 hour.
Saute onions with 1 teaspoon salt in oil until onions are tender.
Add zucchini and eggplant and fry until tender.
Lightly stir in fruits and apple juice, then add next 4 ingredients.
Simmer 10 minutes. Place steamed rice into a buttered 3-quart baking dish.
Smother with sautéed mixture.
Cover and bake at 350 degrees F. for 25 minutes.
Remove and garnish with peanuts and bananas.
Serve immediately.
I absolutely LOVED this recipe. The peaches made it just MMMMM. Usually i go for something a bit spicier like a korma or a coconut ice cream but this is the perfect level for me. I found that adding some sugar to it made it even tastier. I'll certainly be cooking this for my boyfriend. Dance

i found that adding a cup of sugar made it EVEN BETTER. I'll certainly be cooking it again for my boyfriend. Regards, Dance X
