Four ingredients. No flour, no sugar, no eggs, no butter. Just mashed banana, oats, a spoonful of peanut butter, and a pinch of baking powder. That’s it.

The banana acts as both the binder and the sweetener. Its natural sugars caramelize in the oven while the starches hold everything together the way an egg normally would. Peanut butter adds richness and protein so these actually feel satisfying rather than like a sad diet snack.

Quick-cook oats are the right call here. They absorb the banana moisture faster than rolled oats and create a softer, more cookie-like texture in the short bake time.

Kitchen Tips

  • Use a ripe banana with brown spots. Under-ripe bananas don’t mash smoothly and won’t be sweet enough to carry the cookie without added sugar.
  • Press the dough drops slightly flat on the sheet. They don’t spread much on their own, so shape them the way you want them to look.
  • Watch them closely after 8 minutes. These go from done to burnt fast because of the natural sugars in the banana.
  • They firm up as they cool, so don’t panic if they feel soft coming out of the oven.

Variations

  • Fold in a tablespoon of mini chocolate chips for a treat that still keeps the overall count low.
  • Add a pinch of cinnamon or a drop of vanilla extract for more depth of flavor.
  • Swap peanut butter for almond butter if you prefer a milder, slightly sweeter nut flavor.
