1 hrsFast Food 4 is budget weeknight cooking at its most honest. Four main ingredients (rice, crushed tomatoes, frozen spinach, and bouillon) combine in a single pot to produce a warm, savory meal with minimal effort and even more minimal expense. It is the kind of recipe that sustained generations of college students and young families when the grocery budget was tight.
The technique is built for simplicity. Cook rice until almost done, stir in bouillon granules and Italian seasoning for flavor, then fold in a can of crushed tomatoes and a box of thawed frozen spinach. Cover and finish cooking until the rice absorbs the tomato liquid and the spinach heats through.
The result is somewhere between a simple pilaf, a loose risotto, and a stovetop casserole. It tastes better than the ingredient list suggests, and it stretches further than you would expect. Serve as a standalone vegan meal, as a side to grilled meats, or topped with a fried egg and hot sauce for a more substantial dinner.
Kitchen Tips
- Use regular long-grain rice if you have time for the full 20-minute cook. Instant rice is faster but less flavorful.
- Squeeze thawed spinach very dry before adding. Wet spinach waters down the sauce and dilutes the flavor.
- Use crushed tomatoes, not diced or whole. Crushed tomatoes blend into the rice rather than sitting on top.
- Season aggressively with Italian herbs, garlic powder, and plenty of black pepper. The base ingredients are bland; you make them interesting with seasoning.
- Add a splash of olive oil or a knob of butter at the end for richness.
Variations
- Add a can of drained chickpeas, white beans, or black beans for plant-based protein.
- Sprinkle grated parmesan or crumbled feta on top for salt and umami.
- Stir in cooked ground beef, crumbled sausage, or diced cooked chicken for a heartier one-pot meal.
