Here’s the thing about these cookies: they’re loaded with fiber and whole grains, but they taste like a treat, not a health food assignment. The oat bran and wheat germ give them a nutty, toasty chew, while packed brown sugar and chopped dates bring all the sweetness you need.

The dough comes together fast in one bowl. Cream, mix, drop, flatten, bake. Ten minutes in the oven and you’ve got golden, crispy-edged cookies that are somehow both hearty and tender at the same time.

Chef Tips

  • Pack the brown sugar firmly. Loosely measured brown sugar won’t give you enough sweetness or moisture. Press it down into the measuring cup.
  • Chop the dates into small pieces. Big chunks throw off the cookie texture and make them hard to flatten evenly. Aim for roughly raisin-sized bits.
  • Cool on the baking sheet for 5 minutes before transferring. They’re fragile straight out of the oven. A brief rest lets them firm up enough to move to a rack without crumbling.

Variations

  • Raisin oat bran cookies: Swap the dates for raisins and add a pinch of cinnamon for a more classic oatmeal cookie feel.
  • Coconut crunch: Replace the nuts with shredded coconut for a lighter, tropical version with a toasty edge.

Directions

In large bowl, cream margarine, brown sugar, egg and water together thoroughly.

Add dry ingredients, mix well.

Stir in dates or raisins and nuts (or chocolate chips or coconut) if using.

Drop batter by spoonfuls onto lightly greased baking sheets; flatten slightly with a floured fork.

Bake in 350℉ (180℃) oven for 10 minutes or until light golden.

Makes about 3 dozen cookies.
