Cream Cheese Bars

Delicious and so easy. I made two ingredient changes: used reduced fat cream cheese and finely chopped pecans rather than walnuts. Perfect amount of bars without feeling you have to eat a whole cheesecake (so it doesn't go to waste!). I also refrigerated the bars after cooling.

Ingredients

1/2 cup brown sugar packed
1/4 cup butter
1 cup biscuit baking mix (bisquick)
1/2 cup walnuts chopped
8 oz. cream cheese softened
1/4 cup sugar granulated
1 tablespoon lemon juice
2 teaspoons milk
1/2 teaspoon vanilla extract
1 each egg

Directions

Preheat oven to 350F.

Grease 8" square pan. Mix brown sugar and butter till well blended.

Stir in Bisquick and walnuts till mixture is crumbly; reserve 1 cup.

Press remaining mixture in pan with fingers.

Bake 12 minutes.

Mix cream cheese and granulated sugar; beat in remaining ingredients till smooth.

Spread cream cheese mixture over layer in pan; sprinkle with crumbly mixture.

Bake till centre is firm, about 25 minutes.

Braised Lamb Shanks

This recipe is ideal as most people have all the ingredients in their store cupboards. It is nutritious, very tasty and a wonderful winter warmer. When buying a leg of lamb, get the butcher to chop off the shank for you and freeze it until you have one or two and then make up the dish. Remember to add the onion and garlic, which is not mentioned in the ingredients.
