Country Pork Chop Casserole

Ingredients

1 tablespoon vegetable oil
2 each pork chops
1/4 cup onions chopped
1/2 each apple diced
1/2 can mixed vegetables
1/2 can chicken broth
1/2 tablespoon sugar
2/3 cup rice quick cooking

Directions

1. Brown pork chops in oil in heavy skillet.

2. Stir in onions and apple. Cover and cook 10 minutes.

3. Drain vegetables reserving liquid.

4. Stir in liquid, chicken broth and sugar; bring to boil. Reduce heat and simmer until pork chops are cooked, approximately 25 minutes. Remove chops.

5. Bring liquid to boil; stir in vegetables and rice. Remove from heat and let stand 5 minutes.

6. Serve pork chops on rice.

Josh's Coffee Cake

This is a nice coffee cake, but it's not Hobee's. This seems to be the only version of Hobee's on the web, and it may have been on their flyer (or is that urban legend?), but this is not their signature dish. The crumb is much smoother at the restaurant and there is more topping than this recipe calls for. Additionally, it's made in tall tins, not a standard 8x8 or 9x9, which might contribute to the difference in texture. I would love to find their actual recipe somewhere, but this, unfortunately, doesn't seem to be the one.
