These chocolate date truffles come from the no-bake holiday tradition where every cookie tin needs at least one rolled-in-sugar candy that doesn’t require turning on the oven. Melted milk chocolate chips bind crushed vanilla wafers, chopped dates, and vanilla yogurt into a sticky truffle base, scooped and rolled in powdered sugar.

The yogurt is the unexpected ingredient. Most truffle recipes use heavy cream or condensed milk; this one swaps in vanilla yogurt for a tangy backbone that keeps the chocolate from going one-note sweet. The acidity of the yogurt also helps the chocolate set firmer in the fridge.

Dates carry the heavy lifting on flavor. Their natural caramel-toffee sweetness fills out the chocolate without adding extra sugar, and the chewy texture is what separates these from a flat ganache.

The almond extract is a small addition that amplifies the marzipan-like quality of the dates. Don’t skip it.

Pro Tips

  • Melt the chocolate over very low heat, stirring constantly. Milk chocolate scorches faster than dark and seizes if you walk away.
  • Crush the vanilla wafers in a food processor or zip-top bag with a rolling pin. Hand-crushed wafers leave chunks that throw off the texture.
  • Soak the dates in warm water for 5 minutes if they feel dry, then drain and pat dry. Plumped dates blend in better than rock-hard ones.
  • Re-roll the truffles in powdered sugar after a day in the fridge if the coating looks soaked in. The dates and yogurt absorb the sugar, and a fresh dusting brings back the snowy finish.

Variations

Directions

In a medium saucepan over very low heat, melt chocolate chips, stirring constantly.

Remove from heat. Stir in vanilla wafers, ½ cup powdered sugar, yogurt, and almond extract; blend well. Stir in dates.

Refrigerate 10 minutes for easier handling.

Form mixture into ½ to 1 inch balls. Roll in powdered sugar, and place in a single layer in a large shallow container. Store covered in refrigerator.

TIP: One 10 oz package of vanilla milk chips can be substituted for the chocolate chips.

Substitute ½ teaspoon rum extract for the almond extract and 6 oz package dried apricots, chopped for the dates.
