Gravy without the bird? Absolutely.

Nutritional yeast and vegetable bouillon build a savory, umami-rich base that rivals any traditional pan drippings.

Diced mushrooms and onion add body and earthiness, while flour whisked in tablespoon by tablespoon lets you dial the thickness to exactly where you want it.

Pour it over mashed potatoes, biscuits, or a holiday roast and watch the vegans at the table light up.

Pro Tips

  • Whisk in the flour one tablespoon at a time and stir well after each addition. Dumping it all in at once guarantees lumps.
  • Nutritional yeast is the secret weapon here. It gives the gravy that “chickeny” savory depth without any animal products.
  • For a smoother finish, strain out the mushroom and onion pieces, or blend half the gravy and stir it back in.
