| 1 | each | pie shell (9 inch) | unbaked |
| 4 | large | eggs | |
| 1 | cup | sugar | |
| 1/4 | cup | butter | softened |
| 1 | tablespoon | vinegar | |
| 1 | tablespoon | cornmeal | |
| 1 | tablespoon | flour, all-purpose | |
| 1 | teaspoon | vanilla extract |
Combine filling ingredients in mixing bowl, beat on high speed 3 to 5 minutes or until very well mixed.
Pour into pastry shell. Bake at 350 degrees F. 25 to 35 minutes or until golden brown and firm.
Cool before serving.

This really was good. I was out of rice, but I did have orzo, so I used that. Only things I would change is the amount of pepper -- just a smidge will do; and the amount of margarine. If you are making this in a non-stick pan, as the recipe directs, I think you're fine with half that amount.
