Ingredients

12 ounces flour, all-purpose
8 ounces sugar
8 ounces margarine
6 ounces glace cherries
2 ounces almonds ground
1 teaspoon almond extract
4 large eggs
1/2 cup milk

Directions

Cream margarine and sugar. Add egg yolks, beat well, then add flour, milk, glace cherries, ground almonds, and extract.

Beat egg whites until stiff and fold into the mixture.

Fold mixture into a greased and lined 7 inch cake tin. Bake at 320 degrees F. for 75 minutes.

Healthy Cornbread

This was not exactly like traditional cornbread of course, so if that's what you're expecting you may not agree with my rating. However, this was absolutely delicious cornbread. I love whole wheat flour and this cornbread makes excellent use of it. It smells great like cornbread, nice and crumbly like cornbread, and short of taking out the egg yolk it would be hard to beat the healthiness of this recipe.
