This is old-fashioned gelatin salad at its finest, the kind your grandmother brought to every church supper. Lemon gelatin and unflavored gelatin set up a creamy base studded with crushed pineapple, cream cheese, quartered marshmallows, chopped nuts, diced pimentos, and celery, all folded into whipped cream for a fluffy, mousse-like texture.

Using both flavored and unflavored gelatin gives you the best of both worlds: the lemon flavor for sweetness and tang, and the plain gelatin for extra firmness so the mold holds its shape when you unmold it. Letting it partially set before folding in the fillings keeps everything suspended evenly instead of sinking to the bottom.

The 12-hour set time is important. This salad has a lot of mix-ins that need time to firm up properly. Rushing it gives you a wobbly, soft mold that collapses the moment it leaves the dish.

Kitchen Tips

  • Soften the unflavored gelatin in cold water before adding the hot liquid. This prevents lumpy clumps.
  • Let the gelatin cool to the consistency of raw egg whites before folding in the other ingredients.
  • Rinse the mold with cold water before filling. This creates a thin barrier that helps release.
  • To unmold, dip the bottom in warm water for 10 seconds, place a plate on top, and flip with confidence.

Variations

  • Use lime or orange gelatin instead of lemon for a different color and flavor.
  • Swap the nuts for toasted pecans for a richer, more Southern feel.
  • Add maraschino cherries for extra color and a touch more sweetness.

Directions

Drain juice from pineapple.

Add water to make 2 cups.

Heat to boiling.

Pour over lemon flavored gelatin, and the unflavored gelatin, which has been softened in cold water.

Stir until dissolved.

Add lemon juice and salt.

Mix thoroughly. Cool until partially set.

Add pineapple which has been mixed with cream cheese, pimento, nuts, and celery.

Add marshmallows.

Fold in whipped cream.

Pour into mold which has been rinsed in cold water.

Let stand in cold place 12 hours.
