| 2-3 | pounds | pork | (steaks or inexpensive pieces) |
| 1/4 | cup | vegetable shortening | |
| 1 | large | onion | chopped |
| 2 | medium | tomatoes | chopped |
| 2 | each | flour, all-purpose | handfuls |
| 2 | cups | water | |
| 1 | x | garlic powder | |
| 1 | x | salt | pepper to taste |
| 1 | x | cumin |
Cut pork into tiny pieces. Brown in shortening; add chopped onion and tomatoes; stir together. Add flour slowly (do NOT use masa harina!). Stir till thickened as like gravy, then add 2 cups water. To suit, add: garlic powder, salt, pepper, liberal dose cumin. Stew on medium low for 30-45 minutes. Serve with refritos, Spanish rice.

I am rating this 4 stars because first, it tastes good and the consistency is good. It also smells delicious while baking. It also receives this rating because it requires *no butter* and *no oil*. The ingredient list was just what I needed tonight since I had neither. I made my own icing using powdered sugar, vanilla and milk.
