Broccoli rice casserole with Cheez Whiz, mushrooms, and two cream soups. Five minutes of prep, then the oven handles the rest. Pure retro comfort.

This is the casserole your mom made when she needed dinner on the table fast and complaints kept to zero.

Sauteed onions, celery, and mushrooms get folded into cooked rice and broccoli, then smothered in a molten mixture of cream of chicken soup, cream of mushroom soup, and Cheez Whiz.

A sprinkle of paprika on top, 25 minutes in the oven, and you’ve got a dish that tastes like it took way more effort than it did.

Kitchen Tips

  • Heat the soups and Cheez Whiz together gently so they blend into a smooth, pourable sauce
  • Don’t skip the paprika. It adds a pop of color and a subtle warmth that ties the whole thing together
  • Leftover rice works best here. Fresh rice can make the casserole too starchy

Directions

Sauté onion, celery and mushrooms in oleo until soft.

Set aside. Heat soups and Cheez Whiz. Add rice and broccoli to vegetables.

Add soup mixture.

Sprinkle with paprika.

Bake at 350℉ (180℃). for 25 minutes.
