Ingredients

1/2 cup vegetable oil
2 cups sugar
3 large eggs
3 cups flour, all-purpose
1 teaspoon baking soda
2 teaspoons salt
2 teaspoons vanilla extract
3 cups apples
1 cup coconut
1 cup pecans
Topping
1 cup brown sugar
1/2 cup margarine
1/2 cup milk

Directions

Heat oven to 325 degrees. Grease a tube pan. Mix oil & sugar in lg mixing bowl. Add eggs, flour, soda, vanilla, & salt. Beat with electric mixer until well blended & mixture is stiff. Stir in apples, coconuts, & pecans. Spoon into cake pan, bake for 1 1/2 hrs.

Topping:

Mix all ingredients well. Bring to a boil for 2 min. Pour over hot cake.

Naturally Sweet Pineapple Muffins

The texture was pretty good. Without adding any sugar, it was just missing something. I like to eat muffins just as they are, but you got to serve them with butter and jam or something. Otherwise, just tasteless.
