60 minAdobe Pie is the frozen pie that pulls double duty as both showstopper and easy make-ahead. A chocolate wafer crust gets a splash of Amaretto, then vanilla and coffee ice creams are layered like geological strata and finished with shaved dark chocolate.
The Amaretto in the crust is the small detail that punches above its weight. That almond note plays beautifully against the bittersweet cookies and coffee ice cream. Skip it and the pie is fine. Include it and it tastes layered.
Make sure the crust cools fully before adding ice cream, otherwise the bottom layer melts on contact and the layers blur together. Soften the ice cream just enough to spread, and freeze each layer for 15 minutes before adding the next so the seams stay sharp.
A generous shower of grated semi-sweet chocolate on top adds bittersweet contrast against the sweet cream.
Pro Tips
- Chill the pie pan in the freezer for ten minutes before pressing in the crust. The colder the pan, the firmer the bottom sets.
- Use a metal spatula warmed briefly under hot water to spread the ice cream into smooth, even layers without dragging.
- Wrap the finished pie tightly with plastic before freezing overnight to prevent ice crystals and freezer odors from sneaking in.
- Let the pie sit on the counter for five to seven minutes before slicing so the knife glides through cleanly.

Directions
In a medium bowl, place the cookie crumbs, melted butter and Amaretto. Mix the ingredients together.
Press mixture into a buttered pie pan to form a pie shell. Preheat oven to 350 deg. Bake the pie crust for 6 to 8 min. Let cool and then freeze for 15 min.
Spread the vanilla ice cream evenly over the bottom of crust and freeze for 15 min. or until ice cream is firm. Spread the coffee ice cream evenly on top of the vanilla ice cream. Sprinkle chocolate shavings over the top and freeze.
