Bob's Buffet Biscuits

Cheesy buffet biscuits made with Bisquick, Parmesan, and scallions, baked in a 9×13 pan and scored into squares. Makes 2 dozen pull-apart biscuits for feeding a hungry crowd.

Need to feed a crowd without losing your mind? These buffet biscuits are your answer.

Mix Bisquick with eggs, milk, scallions, and a generous helping of grated Parmesan. Press the dough into a 9×13 pan, scatter more cheese on top, and score into squares before baking.

They come out golden, cheesy, and pull-apart soft. Two dozen biscuits from one pan with about 20 minutes of actual work.

Kitchen Tips

  • Flour your hands or spatula before pressing the dough into the pan. It’s sticky and will fight you otherwise.
  • Score all the way down to the pan before baking so the biscuits break apart cleanly.
  • Flip the whole pan onto a cooling rack when they come out of the oven, then flip the rack back over. It sounds fussy but it releases them in one clean move.

Directions

Preheat oven to 350℉ (180℃).

In a big bowl mix the biscuit mix, onions, eggs, milk and about ½ cup of the cheese.

Put the dough into a 9×13 inch baking pan and smooth it down.

You will have to flour your hand or spatula to do this.

Sprinkle the rest of the cheese over the top and then use the spatula or knife to score the dough into square biscuits.

Cut all the way to the pan.

Bake in a preheated oven at 350℉ (180℃). for 40 to 45 minutes.

When they are done a wooden toothpick stuck into the dough will come out clean.

Yield: 24 to 30 biscuits.

  • When you take them out of the oven, flip the pan upside down over a rack to get the biscuits out, then flip the rack over to get everything back right side up again.

  • This is good if you are having a lot of company or want a lot of leftovers.
