Shrimp Cocktail with Fresh Avocado and Mango Salsa

Quick, easy and super refreshing. The combination in this recipe is excellent, both flavor and texture are absolutely thumb up. Great with many of the main dishes, such as BBQ, grilled fish or any recipe that calls for salsa.

Fruity, sweet, tangy and minty. This salsa make a perfect accompaniment with grilled or pan seared pork chops for a speedy weeknight dinner.

The eggplant was seasoned with curry and chili powder, after roasting in the oven, it was full of flavor. I had lots of tomatoes, so I made a fresh salsa, also added some homemade chili sauce. The result was outstanding! Slightly spicy, mango added some fresh sweetness. Definitely a keeper!

This sauce is excellent on chicken, lamb and fish!

Very good with grilled fish, grilled chicken, as a party dip, and even as a sandiwch spread for grilled pork or beef.

Easy to make, and tastes good.
