A very rich and flavorful mushroom soup that highlights the mushrooms. Use any kind of mushrooms you can find from the exotic Enoki and Portabella (as pictured) to the readily available common white mushroom.
Made this dish for supper today, and it was absolutely delicious. Loved this hot peanut sauce so much, it was creamy, slightly sweet, sour and spicy, which made the dish taste amazingly flavorful and tasty.

I make triangles and leave out the mizithra or cottage cheese (too wet for these). Great appetizers if you make them small.
