Very warm and filling. Lots of mushroom flavor and the barley was tender and plump. I used a bit of olive oil to sauté the veggies along with a healthy dose of garlic. Easy to make with easy to find ingredients, perfect for a cool fall or winter day.

In this recipe, we use both salsa and tomato sauce to make this quick and delicious chili. We like serve this warm chili over a toasted hamburger bun, but just having it directly from the pot is absolutely divine.

Perfect for breakfast, couldn't believe that there were oats and whole wheat flour in these muffins, they were so fluffy and moist, needless to day that they were also delicious. It's hard to go wrong with both bananas and blueberries in the muffins. Orange juice added some orange-y taste that was so welcomed. Froze most of them in a zip-lock bag, then either did a quick microwave or put in my toaster oven to reheat a couple for breakfast in the last a few days, healthy and tasty!
