Very good for something so simple. To reduce the fat I cut the amount of bacon in half and made sure to drain it well, discarding the fat. Then I used low-salt bacon to cut down on the sodium. I also added quite a bit 1/4 teaspoon or so of fresh ground black pepper to the mix and cooked it in a pie plate. Turned out very well indeed even with the modifications to make it a bit healthier.
