Bought a big bag of baby bell peppers last week, so we have been making all kinds of baby pepper recipes. This is one of them. Made up the filling by using ricotta and parmesan cheese, basil pesto, toasted walnuts, sun-dried tomatoes and olives (all these yummy ingredients), stuffed the yummy mixture into these cute-looking peppers. After roasting, they came out cheesy, nutty and just delicious. We made some glossy yet tasty balsamic glaze by simply boiling some balsamic vinegar for about 10 minutes. A perfectly delicious appetizer.
