Absolutely perfect. I've never liked most stuffed tomatoes I've tried. Watery soggy breadcrumbs, yuck. But not this recipe. A bit of salt and a bit of time to extract some of the water really helps maintain the integrity of the tomatoes. In addition to the herbs listed in the recipe we added some lovage (which we've never used before) which added this very subtle floral taste/aroma that worked perfectly with the oregano and parsley.
