Madu's incredible Pineapple Utopia desert. Note: I strongly suggest that you make two. (That way other people can have some after you eat the first one yourself.)

237 ml heavy whipping cream

Directions

Drain pineapple, reserving 2 tablespoons of juice. Mix 2 cups graham cracker crumbs with melted butter and spread over bottom of an 8 inch square metal pan. Refrigerate at least 20 minutes.

Cream butter and powdered sugar until well blended. Beat in egg yolks one at a time. Stir in reserved pineapple juice.

In a separate bowl, beat egg whites with electric mixer until stiff. Fold into egg yolk and sugar mixture.

In a separate bowl, whip cream with electric mixer until stiff. Fold pineapple into whipped cream. Spread half of egg and sugar mixture over graham cracker crumbs.

Cover with half of whipped cream and pineapple mixture. Repeat layers with remaining mixtures. Sprinkle top with remaining graham cracker crumbs.

Chill in the refrigerator at least 12 hours before serving. Cut into squares to serve.

Our family used to make this recipe called Pineapple Delight...lost it years ago...but I do believe this is it..or very close...if so...it is one of the tastiest things ever! I do remember I added butter toasted coconut to the top and a teaspoon of almond extract to the creamy layer...but omg...your family will request it weekly...lol..which kinda sux...cause it is a bit of a pain to make...but not something you can ever buy already made...
