A grilled cheese that is reminiscent of French Onion soup.

Directions

Toast the bread until just starting to color, do not over toast.

Heat a non-stick skillet over medium heat.

Spread two slices with equal amounts of the red onion jam (that you made in advance), sprinkle with a few grinding of fresh black pepper and top with the slices of Gruyere cheese. Top with the remaining slices of bread to form a sandwich.

Spread the butter on the outside of the sandwiches.

Place the sandwiches in the pan and grill for about 4 minutes, pressing down occasionally, until crispy and golden.

Flip and grill for another 4 minutes, or until crispy and golden.

I made this for brunch today. I have to say, this is going to be my new favorite. I'd never had such a delicious grilled cheese before in my life. I'm a very big fan of it.
