Best Ever Spinach Quiche

Delicious!! I have made it three times already! The first time I substituted minced onion with minced garlic - big mistake! WAY too much garlic. I have been making enough for two and freezing one. My family loves it!
|4||ounces||spinach||fresh, rinsed well|
|½||cup||monterey jack cheese||shredded|
|½||cup||milk, skim, evaporated|
|1||each||pie shell (9 inch)|
Blend cheeses, onion, oil and seasonings until smooth.
Add eggs, milk, and spinach.
Pour into prebaked (according to directions on box) pie crust shell.
Bake at 375℉ (190℃) for 35 to 40 minutes.
Cool for 10 to 15 minutes.
Serves 6 slices .
