Snow peas need just two minutes in the pan; any longer and they lose the snap that makes them worth eating. Bean sprouts go in afterward for another two or three minutes, which softens them just enough to marry with the pasta while keeping their signature crunch. Overcook them and they collapse into sad water.
Toasted sesame oil is the single ingredient doing the most work here. A tablespoon perfumes the whole dish with nutty, aromatic depth that straight vegetable oil cannot replicate. Lime juice and a handful of fresh cilantro at the end pull everything bright.

Cook pasta according to package directions, set aside.
Heat oil, add pea pods and red pepper, sauté 2 minutes.
