165 minThis German-style yellow split pea puree goes beyond a simple mash. The peas simmer low and slow with a whole onion, carrot, and turnip (or parsnip) in stock until everything turns tender and fragrant with marjoram and thyme.
After blending, a quick roux of sauteed minced onion, butter, and flour gets folded in. That step is what gives this puree its body and silky richness, turning humble legumes into something that holds its own as a side dish or base for heartier meals.
Beat it until fluffy right before serving and you get a texture that’s part mashed potato, part dal, and entirely comforting.
Kitchen Tips
- Check your package for presoaking instructions. Some split peas cook fine without soaking, but older dried peas benefit from an overnight soak.
- Don’t rush the simmer. The peas need the full time to break down completely, and undercooked peas won’t puree smoothly.
- When making the roux, cook the flour for a full 2 minutes to eliminate any raw taste.
- This puree reheats well with a splash of stock to loosen it back up.

Directions
Presoak peas, if necessary, according to package directions.
Drain well, if presoaked.
In a large pot, add water or stock, whole onion, carrot, turnip or parsnip, marjoram, thyme, and salt.
Cook until peas and vegetables are tender, about 1½ to 2 hours.
Drain well.
Mash peas and vegetables in blender or press through a sieve.
In a small frying pan, sauté the minced onion in butter until lightly browned; blend in flour and cook about 2 minutes.
Add to blended peas and vegetables.
Beat until fluffy and serve hot.
