Simple 4-ingredient sweet potato and apple casserole baked with applesauce and cinnamon. Naturally sweet, low-fat, and vegan-friendly. Serve it hot as a holiday side or cold as a healthy snack.

Thin slices of sweet potato and baking apple get layered together, bathed in applesauce thinned with water, and dusted with cinnamon before a covered bake turns everything soft, fragrant, and naturally sweet.

It works hot alongside a holiday roast or cold straight from the fridge as a guilt-free snack.

Directions

Peel the sweet potatoes and slice thinly.

Core the apple and cut into thin slices. (May peel, if desired). Layer the apples and sweet potatoes into a square baking dish .

Combine applesauce and water and pour over the layered ingredients.

Sprinkle with cinnamon, if desired.

Cover and bake at 400℉ (200℃) for 40 minutes.

May be served hot or cold.
