6A lighter turkey chili built on dried kidney beans cooked from scratch, ground turkey browned with onion, and a spice blend that goes deeper than the usual chili powder and cumin. Caraway seeds and celery seeds are the unexpected additions that give this chili a more complex, European-tinged flavor.
Starting with dried beans instead of canned is worth the extra soaking time. Dried beans absorb the tomato sauce and spices during the long simmer in a way canned beans can’t. They also hold their shape better and have a creamier interior texture.
Ground turkey is significantly leaner than ground beef, which is the whole point for a Weight Watchers-friendly recipe. Brown it well with the diced onion before adding to the beans. Even lean turkey benefits from a good sear for flavor.
One to two hours of simmering after combining everything lets the spices fully bloom and the sauce thicken. Add water as needed to keep it at your preferred consistency. This chili should be thick and hearty, not soupy.
Chef Tips
- Soak the beans at least 4 hours at room temperature or overnight in the fridge. Unsoaked beans take much longer to cook and may never soften fully.
- Start with 1 tablespoon chili powder and taste after an hour. Add the second tablespoon if you want more heat.
- The caraway seeds add a warm, slightly sweet flavor similar to what you’d find in a good rye bread. Don’t skip them.
- This freezes well in individual portions for quick weeknight meals.
Variations
- Black bean turkey chili: Swap kidney beans for black beans and add a squeeze of lime at serving.
- Smoky version: Add 1 teaspoon smoked paprika and a chopped chipotle pepper for a smokier bowl.
- White turkey chili: Use white beans, skip the tomato sauce, and add chicken broth and diced green chiles for a completely different take.

Directions
Wash beans.
Cover with water and soak in the refrigerator overnight or a minimum of four hours at room temperature.
Put water, beans, and salt in a soup pot and cook until beans are soft, approximately one hour.
Add water when necessary to keep beans covered.
Do not drain.
Brown ground turkey and onion. Combine turkey mixture, beans, tomato sauce and spices in soup pot.
Simmer over low heat for one or two hours.
Add water to achieve desired consistency.
